Pinchi Umami—a project from Michelin-starred chef Michael Diaz de Leon, creative directors Molly Mandell and James Burke and operations maven Ryan Prieto—is reimagining what it means to be a restaurant in 2024. Instead of something rooted in one specific place or the confines of four walls, Pinchi Umami is breaking down borders and barriers. Its activations might take place in San Francisco or Mumbai. Yet, while its locations vary, the Pinchi experience remains grounded in its most deeply held values: collaboration, reciprocity and curiosity.
For this special collaboration between Pinchi Umami and Alta Marfa, Diaz de Leon, who is also a James Beard finalist, will be joined by Mexico City’s Alonso Madrigal in the kitchen. Madrigal is the mind behind Malix, which earned a coveted spot in the 2024 Michelin guide, and is currently helming the opening of the country’s first zero-waste restaurant Baldío. Together, he and Diaz de Leon artfully combine Mexican heritage with ancestral techniques and influence from around the globe.
